Drink This: Brandy Cocktails

Sack & Lavender

2 oz. Chateau de Laubade VSOP Armagnac
½ oz. Benedictine
¼ oz. sherry
2 dashes angostura bitters
Half a bar spoon or 6-8 drops of lavender tincture (see below)
Orange zest
Pour all ingredients in mixing glass and stir for 15 seconds. Pour over one large ice cube in a double Old Fashioned glass. Garnish with orange zest and serve.

Lavender Tincture:
½ lb loose dried lavender
1 ½ cups vodka or other neutral grain spirit
Put contents into mason jar, seal and shake once a day for two weeks. Strain, discard lavender and use by measure of drops.

Burnt Brandy & Peach

2 oz. Delord Napoleon Armagnac
1 oz. sweet vermouth
½ oz. creme de peche
½ oz. applejack
2 dashes angostura bitters
Pour Armagnac, sweet vermouth, peach liquor, and bitters into mixing glass. Add ice and stir for 15 seconds. Pour applejack into champagne coup and swirl to coat the inside of the glass. Ignite the applejack using match or lighter until entire contents have caught to a mellow blue flame. Pour stirred cocktail directly into ignited coup and serve.

1 oz brokers gin
1 oz Aperol
¾ oz. lemon juice
¾ oz. simple syrup
1 muddled strawberry
5 dashes rhubarb bitters
Bar spoon of mixed black/pink peppercorn
¼ oz Absinthe
In shaking tin, muddle strawberry into simple syrup. Add all other ingredients and shake vigorously for 30 seconds, as to break up the peppercorn. Strain over fresh ice into Collins glass and garnish with lemon zest.
