On Tuesday, March 28, chef Matt Bolus of The 404 Kitchen in Nashville will welcome chef Justin Burdett of Local Provisions in Asheville, N.C., for a Whistle Pig Dinner. Each of the five courses will be paired with a complementary whiskey, three of which have never before been available in Tennessee.

When: Tuesday, March 28; 6:30 p.m. arrival, 7 p.m. dinner
Where: The 404 Kitchen, 404 12th Ave S, Nashville, TN 37203
Menu: The five-course whiskey pairing menu will be a collaboration between chefs Bolus and Burdett
Price: $120+ per person

1st Course - Sunburst Trout | Benton’s Country Ham | potatoes | ramps
Whiskey pairing: Eight Row Flint Barrel Pick Vieux Carre

2nd Course - Charred Octopus | smoked pork fat | Calabrian peppers | bread crumbs
Whiskey pairing: Old World Muscat Finished 12 year (served neat)

3rd Course - Dry Aged Pork | herbed polenta | frisee | pecans | rye whiskey cherries
Whiskey pairing: Pork Fat Washed Whistle Pig Manhattan

4th Course - Duck Breast | fermented fruit | turnip | jus
Whiskey pairing: Strawberry Boss Hog

Dessert - Whistle Pig Parfait | maple syrup | crumble | Italian Rye Meringue
